James Devers is an experienced Executive Head Chef with over 22 years in the culinary world. A top graduate from GMIT, he won silver in the Irish Student Chef of the Year 2005 and has worked in prestigious roles at Ice House, Farnham Estate, and Castle Leslie Estate. James is passionate about using fresh, seasonal, and locally sourced Irish ingredients, blending classic and modern techniques to create innovative dishes. At Tulfarris Hotel & Golf Resort, his vision is to make Fairways Restaurant a leading food destination, focusing on sustainability and exceptional dining experiences, while also mentoring the next generation of chefs.

Former Matre d'Hotel on ITV's prime-time reality show Hells Kitchen and former co-presenter of Masterchef Ireland! Nick's early career journey started with the Roux Brothers many years ago, then working alongside Marco Pierre White, at several high profile London establishments. Nick has owned and operated fine dining restaurants, all the while creating abstract art in his home studio.
