A top graduate from GMIT, he won silver in the Irish Student Chef of the Year 2005 and has worked in prestigious roles at Ice House, Farnham Estate, and Castle Leslie Estate. James is passionate about using fresh, seasonal, and locally sourced Irish ingredients, blending classic and modern techniques to create innovative dishes. At Tulfarris Hotel & Golf Resort, his vision is to make Fairways Restaurant a leading food destination, focusing on sustainability and exceptional dining experiences, while also mentoring the next generation of chefs.
